Besides Skirmish56, I have proposed Simpleton's Chess as another even easier to learn Chess Variant.  You can see the rules here:

I am sure there will be people who will be a bit in shock and horror on how dumbed down the game appears to be.  Its purpose is to be an even simplier chess variant for people to learn, marginally more complicated than checkers.
