What does 'empty' mean? Does it mean that both pieces disappear from the board? If so, it's even more fiendish than the more transparent alternative that I thought of, which was a piece capturing its opposite becoming a Pawn.

Why, yes. Heeheehee. You could think of it, for example, as it being rude for a Knight to take a Queen.
